Recipes worth sharing

As I have embarked on this no wheat, no gluten, less dairy, less sugar lifestyle of mine, I have been collecting quite the amount of recipes. Mainly for ‘sweet’ things. I know how to cook regular meals just fine and often times, I will make a stir fry without the rice, replace regular pasta by steamed zucchini or just have meat and veggies for dinner. Coming up with salads and every day snacks is something I don’t find hard either. Baking goodies for that little treat in the week moment, is however, something a bit more challenging. As well as are more elaborate dishes that involves creamy bound sauces in traditional recipes. So that’s what I go looking for when I’m looking for recipes and I found quite a few. I haven’t tried all of them yet, but some of them sound just too good to keep to myself. Here are 5 recipes that I would still very much like to try and I think should be shared.

The Detoxinista: No Bake Twix Bars

Twix bars are my favorite candy bars together with Snickers. And Detoxinista has recipes for both! Sweetend with dates and honey, this recipe simply hardens in your freezer for a delicious bite of sweetness. I can’t wait to try these. Megan’s recipes are always easy enough to make, though some ingredients might be harder to find here in Holland. Not all she does is my cup of tea, but I value her input on the nutritional value of her recipes as well as her enthusiasm.

The Urban Poser: Almond Flour Blueberry & Lemon Zest Biscuits Dairy/Grain Free)

Another recipe I have to try, but with only 8 ingredients these cookies have to be fool proof. Also contains a minimal amount of honey so no sugar overload here. Add in some almond flour, blueberries and lemons and you have quite a healthy concoction that can fulfill any sweet tooth. I do wonder why they call this a dairy free recipe though: it does contain eggs afterall.

Amazing Paleo: Blueberry Bread

The minute I saw this I thought: Oh YUM! I have been trying my hand at banana breads and loved those, but blueberry bread? Including Vanilla extract, cinnamon & honey? It doesn’t get much better than this. I think this would make a great Sunday morning breakfast: fry up a few slices in some coconut oil, drizzle with extra honey and you have yourself a nice take on french toast.

The Iron in You: Caramelized Cauliflower and Mushroom Casserole

This no wheat/ no grains casserole looks about as yummy and decadent as it sounds. I think this will be great to make at a dinner party. And since it’s all veggie, it will be perfect for vegetarians and meat-eaters alike. It does take some time to prepare, but I think that will be well worth it. You do have to like cheese, mushrooms and cauliflower for this though, but since I’m loving all things cauliflower and mushroom lately, I think I’ll be happy with this.

Oh She Glows: Butternut Squash Mac N Cheese

On to the last dish and it’s one I actually made. This no dairy, vegan Mac N Cheese is as good as the original, if not better. I found this recipe after buying a butternut squash without having a clue what to do with it. This tastes a bit tangy (if your mustard is sharp enough) and cheesy as the same time. I paired it with some zoodles and extra mushrooms when I made mine just to stick to the theme and give it a bit more oomph. Here’s what mine looked like:
