Perfect breakfast recipes

Breakfast is the most important meal of the day, but also the easiest one to skip or forget. Whether it is because you’re busy or just not that hungry, breakfast can also be a bit uninspiring. But it doesn’t have to be! Breakfast foods can be much more than a bowl of milk with some cereal. These are my favorite breakfast picks. Oh and did I mention these are all wheat free too?

Tea & fruit

If you need a light breakfast, just something to drink and a piece of fresh fruit can be a good way to start the day. I usually have this if I know I can’t have too much straight away. Before a morning work out, or if I know I’ll be eating more not too long afterwards, I’ll opt for something small.

Poached eggs and veggies

If I have some time to have breakfast, mainly on days off or during weekends, I like to have heartier breakfasts. Often I’ll opt for eggs in some way shape or form. Poached eggs, boiled eggs, fried eggs, I like changing it up. My favorite must be poached eggs with some sauteed veggies on the side.

Yoghurt with flax seeds & superfood mix

My ‘standard’ breakfast is yoghurt with a few add ins. My favorite add ins are flax seeds and superfood mix: a mixture of goji berries, mulberries, incaberries, cranberries and raw cashew nuts. I often add extra nuts to add some more crunch. And that ranges from almonds to hazelnuts to pecans and pistachio.

Buckwheat porridge with raisins & chocolate sprinkles

Another favorite Sunday morning breakfast is porridge. It’s more filling than anything else and great for having a late breakfast. I add in different things from time to time. Raisins are usually a good bet. So is some form of chocolate, fresh banana slices. You name it.

Yoghurt with superfood, flax seeds and fresh peaches

Variation on the yoghurt breakfast above, but this time with added fresh fruit.

2 ingredient pancakes & fresh fruit

Another weekend favorite: pancakes for breakfast! These are 2 ingredient pancakes: 2 eggs & 1 banana. Mix together and fry up with some coconut oil, sprinkle with cinnamon or honey and you have a great breakfast.

overnight ‘oats’

My recent weekday favorite: overnight oats, but without the oats. Oats don’t agree with me, which is why I came up with a different mixture. Sunflower seeds, pumpkin seeds, flaxseeds, chia seeds, cocoa nibs and bee pollen. Mix together with 3 tablespoons of yoghurt, add some water and let it sit in the fridge overnight. In the morning I add my trusty superfood mix with additional nuts.

  1. I consider my diet t be fairly healthy, but I have to admit that my #1 favorite breakfast is a croissant and a cup of coffe on the train to work. I usually eat a fruit salad before leaving the house, though! But breakfastis by and far my most “fun” meal of the day. I just love yummy breakfast pastries and such, while I prefer healthy stuff like vegetable-laden wraps or salads for lunch and wholesome meals in the evening.

    I wouldn’t shed a tear (or rather: not many tears) if I could never have a pizza or a burger ever again, but DON’T TOUCH MY CROISSANTS!
