Recipe: cheap & easy roasted cauliflower

Sometimes, I like to keep my cooking very very simple and basic. After having had too many potatoes growing up, I now only eat them occasionally and I like to change up the everlasting Dutch tradition of potatoes-veggies-meat by preparing my food in a slightly different way.

Hence my idea for creating a roasted cauliflower & potato meal with some meat on the side. Now again, I am not vegetarian or vegan, but you can easily make this dish just that: add fish, a meat replacement or simply more veggies and you can still have the same dish. This meal isn’t the quickest though as it needs some time in the oven, but it definitely is budget friendly: I paid no more than 4 euros for this entire meal and was able to freeze half the cauliflower for another time.

Total time: 50 mins. Prep time: 5 mins. Cooking time: 45 mins. Servings: 2 – 4 (depending on your portion sizes).

Ingredients:

It is very often to realize that you need an oven for this dish. So you need an oven safe dish and a skillet for preparing this.

Step 1: I start by cutting up my cauliflower and boiling the florets for about 5 mins. You don’t have to cook them all the way as you will still put them in the oven later.

Step 2: Grease your oven safe dish with some olive oil and add your potatoes. Preheat your oven at 180 C (or 350 F).

Step 3: Add your seasonings and some more oil.

Step 4: Mix it all up with your hands.

Step 6: After draining your cauliflower, add to the potatoes.

Step 7: Mix it up and place in the oven for about 25 – 30 minutes, or until your potatoes and cauliflower become slightly brown at the edges.

Step 8: Prepare whatever you are having on the side: meat, fish or veggies.

Step 9: Ta-dah!

When your food comes out the oven you should see a nice golden brown edge around your potatoes and cauliflower. I know that this may seem very pale, but since you precooked the veggies and the potatoes were precooked as well, they don’t need that much longer. If you prefer more color than you can leave the food in a little longer, but I personally don’t like my food to be too crunchy. For added flavor and a bit of naughtiness you could consider adding some cheese on top and popping it back in the oven for a few minutes.

Step 10: serve on  a plate.

As you can see this dish is super easy to make. It is very hassle free and one thing I like about oven dishes is that you can place your food inside and you can go and do something else while your waiting. I usually take my timer with me to my room and write blog posts or what some TV while I am waiting for my food to be ready. It does take a little bit longer for your food to be done overall, but I find it to be well worth it.
