Let’s start off the new year with an overview of some of the meals I ate during the past few months. Most of these I shared on my Instagram account, but there are also several things in here that I just snapped a picture of, but didn’t post anywhere else before. Post workout lunch:
avocado on rice cakes and cream cheese scrambled eggs
My most recent ‘discovery’: avocado. It’s not a true discovery as I tried avocado many times before. I just never really liked it much. And then a few weeks ago, I decided to try it again and O-M-G: all of a sudden I absolutely love it. I squash mine in a bowl with a fork and spread it onto crisp bread or rice cakes and add a bit of lemon juice, salt and loads of pepper and I am in heaven.
Breakfast
Breakfast wise I haven’t been eating anything too different from the usual. On workdays I have oatmeal porridge with banana and cinnamon. On days off, I’ll have some yoghurt with granola, a smoothie or some form of eggs. I really started having more eggs again lately: boiled, scrambled, fried, on toast, with bacon or as is.
Lunch:
For lunch I love having the aforementioned avocados. However, I like to sneak in a chocolate croissant from time to time. On most days, when I am at work, I like to heat up leftovers for lunch though. And now that I have found bread that my body can deal with, I now have a few slices of bread throughout the week, usually for lunch.
Dinner:
This blog post features mostly some of the different dinners I have been cooking the past few months. As I am at work most days and I have leftovers for lunch then, I tend to cook dinner mostly. This dinner was something I whipped up last Sunday night, using leftovers which were lying around my freezer and fridge. I only bought the broccoli. I roasted my veggies in the oven and then added some cheese slices and allowed those to melt and cover the veggies. And then I fried up some spicy chicken wings.
Soups, pasta, potatoes and rice: some of the staples that I change up whenever I prepare a meal. I made some broccoli-lentil soup, a rice and beans dish with chorizo, pesto pasta and some roasted cauliflower and potatoes with some meat. All quick and easy meals that are handy for taking on the go and heating up at work.
Cheeseburgers with sauteed onions and mushrooms
I haven’t been much into vegetarian dishes lately. In fact, I have been having quite some meat. I blame my renewed interest in working out. As soon as I upped my game, I started craving meat and so I decided to indulge that urge as it is makes for an easy way to get some protein into my system as well. Here you can see some more pasta dishes, including a spaghetti bolognese that worked out great. I also had some more chicken and beans and created a new take on wheat free pancakes.
Dessert:
Sticky toffee pudding
Roasted fruit & vanilla mascarpone
Since we just finished the party season, I couldn’t write this post and exclude some of the dishes I created for several dinners and other get-togethers I attended. Boxing Day always is a potluck dinner in my family and this year I decided to create a warm sticky toffee pudding. For my New Year’s breakfast at work I decided to make some roasted fruit (apples, pears & cranberries) with some vanilla flavored mascarpone. I already had a taste of it the night before to see what it would taste like, which is when I took this picture.
