Not too long ago, I posted a recipe for a quinoa salad with roasted chickpeas. This recipe was such a success, I’ve even had people recreate it, tagging me on Instagram! I decided to try my hand at a different quinoa salad, with lots of greens and feta cheese for some added protein.
Quinoa salad with feta cheese, red onion and leafy greens
With this salad I was going for a fresher more zingy taste. I’m usually not a fan of dressings, but for this salad I decided to add some squeezed lemon and lime juice to add some flavor. I also finely chopped some cilantro for the same purpose. I also chopped up some red onion, which I probably could have gone without. It made the salad taste rather strong and overpowered the other flavors. My advice: use less or leave it out.
Ingredients:
- a large bag of mixed lettuce
- 2 – 3 generous handfuls of spinach coarsely chopped
- 50 – 75 grams of quinoa (cooked in vegetable stock and cooled down)
- juice of one lemon
- juice of one lime
- one red onion
- finely chopped cilantro
- 1 package of feta cheese, diced
You don’t need any special kitchen tools for creating this dish other than a large mixing bowl.
Step 1: Start by prepping the salad the night before. Cook the quinoa according to the directions on the packaging. I boil mine in veggie stock to give the quinoa some flavor. Let cool and store in the fridge overnight.
Step 2: Chop everything that needs chopping.
Step 3: Take out your quinoa and leafy greens: combine in a large bowl.
Step 4: Add your spinach & combine
Step 5: Add the onion & cilantro, combine again.
Step 6: Squeeze your lemon & lime. Combine the lemon & lime juice and pour into bowl. Combine again.
Step 7: Add your feta cheese and combine again.
