Salads are such quick and easy meals to make and especially when temperatures rise, it is the best convenience food. This week we’re having quite the Indian summer, and so what better moment to share one of my favorites? Think of it as an amped up salad caprese: there’s still the mozzarella, basil and tomato base, but by adding a few more ingredients you can make it far more filling and nutritious.

What’s more is that this salad is so easy, it is fool proof. Anyone can make this and apart from the mozzarella, which can be quite pricey depending on which you get, this is also very budget proof. In short, this is a recipe for anyone and everyone, no matter your wallet.

Ingredients:
- assorted lettuce
- fresh basil
- mozzarella balls
- black olives
- cherry tomatoes
- 1/2 cucumber
The only thing you have to do in order to prepare this dish is to cut the ingredients that need cutting and toss. You can chop it up very finely if you wish, but I like my salads quite chunky so there is plenty to chew on. The amount of people this serves, depends on the amount of food you give them. If a meal on its own, then 2 people will be the max, but served as a side you would have enough for 4.
You will find that this salad recipe comes without a dressing or a vinaigrette. Personally, I dislike any type of liquids in, on top or tossed into my salad. I’d rather eat it as is. However, if you like your salads a bit more fancy, then a simple mixture of olive oil and balsamic vinegar with some salt and pepper can already satisfy your needs. Or add some olive oil with some lemon juice mixed in. The latter can be spiced up even more by adding a generous amount of dried dille. Not only will the lemon add a splash of freshness, but it will also add some more flavor to the whole.
Other options for some variation are adding some pesto pasta if you want to add a helping of carbs, bell pepper is you want to add a bit more crunch and fresh spinach if you want to add some more leafy greens. In short, this dish is versatile to the max and you can amp it up to whatever your needs are. I hope you enjoy this one!
