I’m still not feeling well at all, but I had to get round to eating something anyway, so I decided to throw something together that would be quick, tasty and healthy all at the same time.
Voila: a quick stir fry with broccoli & salmon and whole wheat rice added in the mix. Broccoli is my favorite veggie hands down. It’s versatile, tastes awesome (imo) and is good whether boiled, raw or fried. It goes in soups, with potatoes, in quiche, pastas and tastes great in combination with salmon. I prefer whole wheat or brown rice over regular rice as it has more taste and it is apparently healthier as well. When it comes to fish I can be rather picky, you can however never go wrong with salmon I find.
I think this dish took me about 15 – 20 mins to make from start to finish. So if that isn’t quick I don’t know! Here’s how I did it:
Ingredients:
– whole wheat rice
– one stalk of fresh broccoli
– 2 fillets of salmon
Preparation:
– boil rice according to package
– cut up the broccoli in small pieces. For this dish I didn’t boil the broccoli and it will hardly get cooked if you make the pieces too big.
– Put some olive oil in a deep pan. I used a mini sized wok my mom bought me a few years back. Put in the broccoli. Give it a stir so the pieces of broccoli are all coated in a thin layer of oil. Put a lid on your pan and let it cook for a while.
– In the mean time you can start cutting up your fish. Just dice it.
– Add the fish to the broccoli and let it cook until the broccoli is as soft/ hard as you like it. I like mine with a lot of bite to it, so I only cooked it for about 10 – 15 minutes. If you would like your broccoli to be softer, you may have to boil it before stir frying it.
– Drain the rice and add to the broccoli & salmon pan and stir it all together. You can also leave out this step and serve the rice on the side. It will look prettier I think.
It’s light, full of flavor and quick. A great dish if you have little time (or energy like me right now), yet would like to eat something healthy and tasty. If you want to add some other ingredients you could put in some pine nuts and add a squeeze of lemon and/or lime juice for a bit of an extra kick.
