I’ve really been trying to be more diligent about my eating patterns again. After having dabbled in low carbing, and going completely wheat free, things improved greatly and I found that I could eat anything I want again without too much discomfort. But that did mean that I went a little overboard. So late last summer I decided I needed a complete overhaul. I started working our more again and I made a point of eating food I love, while cooking regular meals and having the occasional treat as well. That’s why I thought it would be good to show you what I roughly buy on a weekly basis when I get my groceries. I hope you enjoy!
A recent food shop
I love my comfort food and from time to time I like to cook up a feast in the form of hamburgers. But where I would usually make that with a bun and loads of different toppings, I figured that you could easily change things up. Inspired by a Blogilates recipe, I decided to replace the bun for a roasted portobello mushroom and some sauteed onions on the side. This makes a great, quick and easy recipe for the weekend.
A healthy cake? When I spotted this recipe, I knew I had to try it. I’ve been meaning to do some more baking again, but I just haven’t had the time to find new recipes to try. Until I spotted this that is. I found it on a random health website, which linked to this one, where you can find the original recipe in Dutch. I adapted it to fit my own needs and came out with this: a delicious yet healthy banana-coconut cake.

For a few years now I have mostly been on a wheat free diet. Back in 2013 I discovered wheat messed too much with my system and that’s when I started experimenting with substituting wheat. By now I have found quite a few products that I love using instead of wheat. Wheat is still the standard in most products though, so it sometimes takes a little bit of effort to make these work, but in the end these are all useful foods I keep in my cupboard at all times.
Recipe time! For a fun music filled night with friends last weekend, I decided to do some baking again. I love to bake, but don’t get to do it enough. Time is an issue, but since I usually have to eat everything by myself, it isn’t a great idea as well. So that’s why my baking endeavors are now limited to whenever I have time and there is a social gathering. Case in point: last Saturday and I made a raspberry ripple cheesecake.

It’s been months since I last showed you some of my meals, but don’t worry: I still eat! I just haven’t been interested in taking too many pictures of my daily grub. So it’s taken a lot longer than usual for me to put together a What I Eat blog post. Some of these meals go back to summer. Go figure. I have been cooking more these past few months though and that has resulted in some yummy meals. Join me as I talk you through some of my favorites.

Long time no recipe! And today’s recipe is a different type from what I usually post. I don’t know about you, but sometimes, I just need comfort food, especially if it’s cold outside. One of my favorite comfort foods that is certainly NOT good for you but still entirely delicious (though it looks gross until you plate it) is fries with sticky chicken.
