Recipe: Banana oatmeal cookies

Quick and easy snacks that are tasty and healthy are always high on my list. I searched high and low for unsweetened cookies and when I couldn’t find exactly that, I decided to create my own. This recipe is thus a mixture of wild guesses, and based on several different recipes I found online.

Banana oatmeal cookies

You can bake ‘cookies’ with just oats and banana and bake them in an oven for an even easier and simpler recipe, but I decided to make these more cookie like and add some baking powder, baking soda and an egg. They are sweetened with some maple syrup, but mostly bananas.

Serves: 12 cookies. Prep time: 10 mins. Baking time: 15 mins. Total time: 25 mins.

Ingredients:

  • 2 bananas
  • 1 cup of oats
  • 1 egg
  • 1 tblsp maple syrup
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • As much cinnamon you like
  • Optional: raisins, walnuts, chocolate chips or any other fillings you’d like to add

For tools you don’t need much: just a baking sheet lined with baking paper and a food processor will do.

Step 1: Preheat your oven to 180 degrees Celsius.

Step 2: Put your oats into your processor and blitz them up into a fine flour.

Step 3: Put aside oatmeal flour.

Step 4: Add banana & eggs to processor and blitz together until creamy.

Step 5: Add cinnamon, baking powder, baking soda & salt.

Step 6: Add in oat flour.

Step 7: Stir in and keep stirring until the mixture starts coming together.

Step 8: Ladle your mixture onto your lined baking tray. Make sure you keep some space between the cookies to prevent them from sticking together.

Step 9: Bake for 15 minutes at 180 degrees Celsius. Make sure your oven is nice and hot.

Step 10: The result is golden brown cookies that are slightly chewy on the inside but with a hint of crunch on the outside. My second batch came out a lot better as you can see as my oven was a bit hotter than for the first batch. So make sure you preheat your oven properly before making these.

P.S. I no longer know where I got the idea or where this came from. I don’t have it written down anywhere and I cannot find the exact recipe anywhere.
