This time of year is the best time for making soups. One of my favorite types of soup to make is a lentil soup. I already shared a recipe for a red lentil, pepper & sweet potato soup earlier this year. But lately I’ve been experimenting more with using green lentils. My favorite combo? A green lentil & broccoli soup.
Prep time: 15 mins. Cooking time: 30 -40 mins. Total time: 45 – 55 mins. Serves 4 – 6.
- 2 broccoli
- 250 grams green lentils
- 1 can coconut milk
- 2 liters of chicken or veggie stock
- salt/ pepper
- 1 clove of garlic
- 1 onion
- olive oil
- Optional: fresh basil, coriander and/ or parsley

Step 1: Chop up your veggies
Step 2: Add your garlic and olive oil to a hot pan and stir until the garlic has browned
Step 3: In the mean time, make your stock according to the instructions and wash your lentils
Step 4: Add your onion and stir until glassy.
Step 5: Add your broccoli and stir until combined properly
Step 6: Add your flavorings including salt/ pepper and again stir well
Step 7: Add your lentils.
Step 8: Add your stock and bring to a boil.
Step 9: Let boil as long as your lentil packaging instructs you to do.
Step 10: Take out your blender and blend all the ingredients together.
Step 11: Stir in your can of coconut milk and reheat your soup.
And your soup is done! This soup is even easier to create than the first lentil soup I showed you. There are fewer ingredients to deal with, so it is easier to prepare as well. Just make sure you add plenty of broccoli to add some body to the soup and you can flavor this using anything you like. The stock itself will already add some flavor and then you can simply have fun with it.
